The thing I tend to forget, when I happen to have had a weird long day, is that the kids have had the same day I had. So even though I’m ready for them to go to bed a little bit early—which would totally fly on a normal day—when bedtime rolls around on one of those weird days, the kids have other thoughts. They kind of sound like: How can we possibly go to sleep? We’ve had a weird long day and we haven’t managed to unwind yet! Yeah. I should have thought of that. But it was such a long day…

Oh, man, I hear you. When things are blissfully easy all day and you want to drag out bedtime, yay. When the day is tough and you barely make it through and think, half an hour early wouldn’t hurt anyone, the day gets worse.
Your explanation is, of course, spot on. But I prefer to think that they can smell impending happiness and seek to thwart it. Because it makes me feel more justified in my chocolate intake.
I think there can be two equally valid explanations. Especially when this one gets you more chocolate.
